What better way to keep the family bonded during a very cold and stormy weather than food. Filipinos have considered this as one of the best comfort food. It is known as “Arroz Caldo” which is actually a famous Asian food. It originated in China and is known as “congee”. In Myanmar they call it “hsan byok”, “kanji” in India, “bubur” in Indonesia, “okayu” in Japan, and “juk” in Korea.
Names for congee are as varied as the style of its preparation. Despite its many variations, it is always a thick porridge or soup of rice which has usually disintegrated after prolonged cooking in water. For my recipe, the sticky rice or “malagkit” was slow-cooked in chicken stock, added with sauteed chicken in ginger then topped with toasted garlic, spring onions and boiled egg. :)))
